Ingredients:
For the Dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tbsp olive oil
- 1 cup warm water
For the Fillings (Choose one or combine):
- Spinach & Feta: 2 cups fresh spinach, 1 cup crumbled feta cheese, 1 garlic clove (minced)
- Minced Meat: 200g ground beef or lamb, 1 small onion (finely chopped), 1 tsp paprika, salt and pepper to taste
- Potato: 2 medium potatoes (boiled and mashed), ½ tsp cumin, ½ tsp red pepper flakes, salt to taste
Instructions:
Make the Dough:
- In a large bowl, mix the flour and salt. Add olive oil and gradually pour in warm water, mixing until a soft dough forms.
- Knead the dough for 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Prepare the Fillings:
- For Spinach & Feta: Sauté the spinach and garlic in a little olive oil until wilted. Remove from heat, let it cool slightly, and mix in the feta cheese.
- For Minced Meat: In a pan, cook the ground meat and onions until browned. Season with paprika, salt, and pepper.
- For Potato: Mash the boiled potatoes and mix in the cumin, red pepper flakes, and salt.
Assemble the Gözleme:
- Divide the dough into 6-8 equal pieces and roll each piece into a thin, large circle.
- Place your chosen filling on half of each dough circle, leaving some space around the edges.
- Fold the dough over to cover the filling and press the edges together to seal.
Cook the Gözleme:
- Heat a non-stick pan or griddle over medium heat. Lightly oil the pan and cook each Gözleme for 2-3 minutes on each side, until golden and crispy.
- Serve hot, with a drizzle of olive oil or a squeeze of lemon juice if desired.
