Ingredients:
- 1 lb (450g) turkey breast, thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 medium onion, thinly sliced
- 1 bell pepper (any color), sliced
- 2 tbsp curry powder
- 3 tbsp honey
- 1/2 cup coconut milk (or heavy cream for a richer taste)
- 1 tbsp soy sauce
- 1/2 tsp ground ginger (optional)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan (for serving)
Instructions:
Prepare the Turkey:
- Season the turkey slices with a little salt and pepper.
Cook the Turkey:
- Heat 1 tbsp of olive oil in a large pan over medium heat. Add the turkey slices and cook until they are no longer pink, about 4-5 minutes. Remove the turkey from the pan and set aside.
Sauté Vegetables:
- In the same pan, add the remaining olive oil. Sauté the onions, garlic, and bell peppers until they are soft, about 3-4 minutes.
Add Spices and Honey:
- Stir in the curry powder and ground ginger, cooking for another minute to let the spices bloom.
- Add the honey and mix well with the vegetables and spices.
Make the Sauce:
- Pour in the coconut milk (or cream) and soy sauce, stirring to combine. Let the sauce simmer for 2-3 minutes, allowing it to thicken slightly.
Combine Everything:
- Return the cooked turkey to the pan, stirring to coat it in the sauce. Simmer for another 3-5 minutes until the turkey is fully cooked and the flavors meld.
Serve:
- Garnish with fresh cilantro and serve over rice or with warm naan bread.
