Honey & Curry Turkey Saute


 

Ingredients:

  • 1 lb (450g) turkey breast, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 1 bell pepper (any color), sliced
  • 2 tbsp curry powder
  • 3 tbsp honey
  • 1/2 cup coconut milk (or heavy cream for a richer taste)
  • 1 tbsp soy sauce
  • 1/2 tsp ground ginger (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan (for serving)

Instructions:

  1. Prepare the Turkey:

    • Season the turkey slices with a little salt and pepper.
  2. Cook the Turkey:

    • Heat 1 tbsp of olive oil in a large pan over medium heat. Add the turkey slices and cook until they are no longer pink, about 4-5 minutes. Remove the turkey from the pan and set aside.
  3. Sauté Vegetables:

    • In the same pan, add the remaining olive oil. Sauté the onions, garlic, and bell peppers until they are soft, about 3-4 minutes.
  4. Add Spices and Honey:

    • Stir in the curry powder and ground ginger, cooking for another minute to let the spices bloom.
    • Add the honey and mix well with the vegetables and spices.
  5. Make the Sauce:

    • Pour in the coconut milk (or cream) and soy sauce, stirring to combine. Let the sauce simmer for 2-3 minutes, allowing it to thicken slightly.
  6. Combine Everything:

    • Return the cooked turkey to the pan, stirring to coat it in the sauce. Simmer for another 3-5 minutes until the turkey is fully cooked and the flavors meld.
  7. Serve:

    • Garnish with fresh cilantro and serve over rice or with warm naan bread.
